One trick I found that greatly enhances the taste of beans and reduce cook time is soaking. It's not a necessary step but I can no longer cook beans without first. Many versions of Jollof rice exist throughout West Africa, where the rice-and-bean combination makes a satisfying and nourishing meal. Season to taste with salt and pepper.
Rice and beans jollof step by step
- Wash meat place in a pot, adda seasoning cubes, slices onion,salt, spices, cook until soft. Keep aside.
- Wash beans place in a pot add enough water to cover it, set over medium high heat, boil it until soft. Drain and set aside.
- Boil rice until halfway cooked, drain into a sieve rinse in cold water and set aside.
- While rice beans are cooked, grind tomato, tattase, scotch bonnet, and onion together. Pour vegetable oil into a pot over medium heat,add slices onion, fry until soft, add tomato paste mix and fry for one minutes.
- Add puréed tomato, stir and fry until dry(oil is floating on top). Crush and add seasoning, cubes, and crayfish. add a little warm water and add some meat, fish, beans, rice,and kpomo, stir and taste.
- Cover tightly and cook until soft, and little water has remaining. Stir and reduce heat to very low, cook until water has been absorbed, stir and serve😋.
